Most brewers would be discouraged if their first batch of beer were ruined because of oxidation from the wine barrels it was aged in... which is what happened to Adam Firestone and David Walker. Instead of quitting, the two opted to give it another go, perfect the use of oak barrels, and patent the brew system that they created. The result is a wonderful blend of old world brewing techniques with new school technology. The spicy, floral hops and the mild malt aroma in this beer are well-balanced. The hints of oak and smokiness make the flavor complex for an English pale ale and play nicely off of the breadlike malt and floral hop flavors. This well-rounded, light amber brew is always refreshing.
