Organic ales emanate freshness, and this brew was no exception. It is instantly apparent that this beer has fresh hops in it, even at the first pour -- the overwhelming aroma is the best of any in this style. The taste was much more subtle, however. Wild Salmon's bittering hops tasted woody and slightly piney with just a hint of citrus, while the malt had hints of fresh pasta. Fruity esters from the yeast and grainy malt blended seamlessly and, coupled with the low carbonation, finished the beer cleanly. |
