Full Sail makes Wassail in the style of an old ale, which lends this beer its rich malt taste and chewy texture. It pours copper and ruby colors with a brilliant clarity that makes this one of the best looking beers we have seen. In the nose, hops are moderate but dominant, but in the swallow, the malt takes the lead. The strong malt character in the flavor lends a sweetness that is more prominent in this beer than in most winter brews, and you'll pick up some fruit flavors along with smoked malt, too. If you're too busy with holiday gatherings this season to drink Wassail, don't fear: It ages very well for up to a year. |
