Brother David is named after David Keene, owner of the world-famous Toronado pub and a Belgian beer enthusiast. This dubbel is crimson, very clear, and has a big, creamy, tan head. Its aroma is dominated by alcohol, but tucked beneath is also burnt sugar and yeast-derived spice. The first sip reveals a lot of dark, sweet fruit: figs and plums outplay the more subtle flavors of caramel and roasted barley. This American-brewed dubbel showcases a complex flavor profile, a full-body, and creamy carbonation. It also does little to hide its massive alcohol presence as the beer warms the chest well into the aftertaste.
