There are few beers in the world as acidic or sharp as those put out by Cantillon; the myriad full flavors are what render this beer a world-class example of the style. In the glass it’s unassuming, just hazy and orange-yellow with a thin, white crown. Everything changes with the first whiff; a pungent acidity takes hold, and it becomes difficult to focus on the more delicate wheat and almond notes. The first taste awakens the palate and the body, jolting the system with an intense sourness akin to lemonade. The acidic lemon flavors and tart wheat dominate the palate; subtle earthy notes round out the experience. The beer is medium-bodied, with very fine tiny bubbles and an extremely dry finish. |
