Wood-Aged Beer
ABV: 9.5%
IBU: 80
RATING
90
This oak-aged imperial stout pours dark as night with an impenetrably dense tan head that doesn’t waver. From the body, a smoky and slightly sour component initially grips the nose, before opening up to cinnamon, dark raisins, and earthy oak once the beer warms. There’s no mistaking the oak presence in the flavor, as tannins, vanilla, and a deep wood-roasted quality fuse with the first rush of dark, roasted malts and chocolate. Bitter from front to back, the brew’s flavors are extremely tight-knit, washing over the palate before finishing with a surprisingly enjoyable red winelike character with just the faintest cherry presence. The brew’s highly carbonated, so let it sit awhile before enjoying this chewy imperial stout.
