This burnt-orange brew pours slightly hazy and is topped with a cream mousselike head. Allagash brews this aptly named beer with four malts and four hops and it’s fermented four times; the process leads to a wonderful version of a Belgian quadrupel. The bouquet is smooth and fruity; raisins and plums swirl to the nose, sprinkled with spicy, black pepper scents. On the tongue, it’s a touch sour, twinging the sides of the tongue while sweet caramelized sugar flavors coat the mouth. There’s a brief surge of raisin flavor in the middle of the swallow before it sums up dry and tingly on the tongue. |
