Cadillac Mountain sinks heavily into the glass, its inky black appearance punctuated only by ruby highlights and a long-lasting, big-bubbled tan head. Roasted malts and grassy hop aromas intertwine and balloon in the nose for a round, balanced bouquet. Let the first sip settle on the tongue for a moment: Rich caramel and chocolate flavors soak in first, nearly obscuring the roasty background. As the brew moves across the palate, citrus flavors rise up in the middle, while bitter, acidic hops grab the sides and merge with the roasted character in the back of the throat for a moderately dry finish that leaves just a hint of roast on the tongue. |
