Tart green apple and peppery yeast aromas poke the nose while enticing sweet honey scents tempt the mouth to sip this pale straw mead. Those same notes comprise the start of the flavor, flowing over the front of the tongue before the honey breaks away and surges through the center of the swallow. Peppery and earthy notes pluck the taste buds from tip to back, bringing some zip to the mouthfeel. The sweet honey subsides in the end, where tart lemon, green apple and a dose of warm alcohol dry out the mouth for a clean finish. |
