I made these cookies but substituted pistachios in for the pumpkin seeds. They were perhaps the best cookies I've ever made. The pistachios get soft and the Guiness flavor is an extra kick to all the sweet. The only other thing i might change is to add oatmeal to bulk the cookies up a bit because the dough is very runny and the cookies bake out very thin. My new favorite!
