Morimoto’s Soba Beer Chicken

Recipe by Masaharu Morimoto

Using the specialty beer he brewed with Rogue Ales, "Iron Chef" Masaharu Morimoto prepares a new spin on soy sauce-splashed chicken.

Serves: Serves 2

Ingredients:
  • 1 2-pound chicken
  • 6 fingerling potatoes
  • 16 ounces Morimoto Soba Ale
  • 8 ounces Coca-Cola
  • 2 cups potato starch
  • 3 ounces soy sauce
  • 5 tablespoons sugar
  • 1 1/2 ounce cream cheese
  • 1 1/2 tablespoon apple vinegar
  • 1/2 tablespoon white soy sauce
  • salt and pepper to taste
  • vegetable oil, for frying

Instructions:

  • Clean chicken and cut into large pieces. Lightly season each piece with salt and pepper, and dust with potato starch.
  • Deep-fry pieces in 345-degree vegetable oil for 5 minutes. Remove with a strainer, letting excess oil drip off.
  • In a separate pan, boil fingerling potatoes in water for 8 minutes or until soft.
  • In a large pan over medium heat, add 2 teaspoons of vegetable oil. Add in fried chicken, beer, and Coca-Cola and cook for 8 to 10 minutes until chicken is tender.
  • Add sugar, soy sauce and potatoes and cook for another 8 to 10 minutes. Skim fat from the top of the pan; let the sauce reduce and thicken.
  • In a small bowl, mix cream cheese, vinegar and white soy sauce. Pour sauce over chicken and serve.
